technically there’s no blood in the steak since the meat would have been bled before being butchered, the liquid that comes out of the steak is more correctly called purge before cooking (the liquid that spills out of frozen meat packages after you thaw them) or drippings after cooking, basically concentrated broth. Purge has proteins and water in it, including myoglobin which makes blood red, but blood has many more components to it including the *hemo*globin which carries oxygen and blah blah blah
Fun fact: meat from the store doesn’t have more than trace amounts of blood. All blood is drained during butchering. The “blood” you are running from a rare steak is actually just water rich in myoglobin.
